This pasteurization process ensures that the product is free of salmonella and other harmful bacteria. Avidin, which causes a blockage in the absorption of vitamin B6, is also removed when the Liquid Egg Whites are pasteurized. Thanks to this process, there is much less chance of a person developing a vitamin deficiency when using Liquid Egg Whites.
