5 Peanut Butter Recipes Made Right In The Jar

Peanut butter is a protein packed snack that is delicious on everything from apples or whole grain toast to popcorn or eggs (trust us – it’s exquisite!) so it’s a little bit sad when we get to the end of the peanut butter jar and we have to scrape and scrounge for just a bit more of that tasty treat. Trying to get every last bit out so that nothing goes to waste can be a real pain, but no one likes to throw away perfectly good peanut butter. That’s why we’ve decided to show you a few quick and easy ‘recipes’ to use up the last of the peanut butter without ever having to scrape the jar again.

Faster and less fussy than a traditional gumbo, I’ve given this savory recipe’s roux a makeover with soy and oat flours, so you can enjoy a gluten free dinner. Shrimp, chicken, and sausage add huge flavor and lots of protein, while our ISOPASTA Rice soaks up all that great Creole sauce.

PASTITSIO PENNE

Serves 6

Pastitsio is an amazing Greek pasta dish with lots of ground beef, layers of creamy béchamel sauce, and tons of carbs.  It’s comfort food at its best, but I wanted to take this old favorite of mine and give it a new twist with our amazing ISOPASTA Penne.  There’s some new flavors, some new proteins, and a good dose of feta cheese to bring lots of flavor without the sodium or calories.  Best of all, this pasta bake keeps well for days, making it a great fit for your meal prep lifestyle.

Wine Recommendation:  A big, loud Cab will pair amazingly with this hearty dish.  Cheers!

When I came across the idea of cooking fish in a skillet on the grill, I was sold.  This easily-prepared meal is a real show-stopper to bring to the table, and best of all, it keeps amazingly well.  A hearty fish like cod not only has amazing stores of omega-3’s, vitamin B12, and protein, but it keeps remarkably well without drying out from reheating in a microwave.  This means that you can enjoy your fish and ISOPASTA Rice all week, stored in our Isolator Fitness Meal Prep Containers, making this a great dish for your health and your meal prep lifestyle!

FAUX FRIED RICE

Serves 2

I developed this fast, easy, flexible recipe out of a frustration with traditional fried rice – a meal no one ever walks away feeling good from!  The white rice and high sodium content crash your body out fast, leaving you more likely to snooze on the couch than lead an active life.  For me, my version made with leftover quinoa is simple comfort food at its best – it’s salty, it’s spicy, it’s savory, and it packs an amazing protein punch that fuels you through your day.  I sometimes add in a diced maple chicken sausage patty for even more protein and a little touch of sweetness.  You can make this dish your own, too, with leftover cooked veggies or chicken, whatever you might have in your fridge that appeals to you.  And don’t worry about what time of day it is – this “fried rice” is amazing for breakfast, lunch, or dinner!

I recently had an early morning flight to catch, and I knew I wasn’t going to love the airport breakfast (or worse, in-flight!) options available at 6AM.  I took literally a few minutes the afternoon before my trip to whip up a batch of my personal favorite overnight oatmeal.  I packed it in a disposable container, packed a disposable spoon in some napkins, and stored my toasted walnuts in a Ziploc bag – nothing I needed to worry about washing out or saving when I got off the flight.  Let’s just say I was “that girl” on the plane, while everyone else was reluctantly chowing down on their free pretzels.  This breakfast is so tasty, so good for you, and so filling; pop this lovely start to your day in your ISOBAG and become the envy of other travelers.

TURKEY MEATBALLS

Makes 25

Meatballs can be tricky – loaded with breadcrumbs and fat, they may taste great, but they’re not so great for you. My version uses lean ground turkey breast to give you a low-fat, low-cal, low-carb meatball that tastes amazing with our incredible ISOPASTA. Best of all, these meatballs freeze beautifully, so you can make a double or triple batch to have ready to stir into your favorite pasta sauce whenever you want!

Wine Recommendation: The wine you ultimately choose will depend on your sauce. On their own, though, these lovely little meatballs go well with a mellow Malbec. Cheers!
