Healthy Chicken Soup Recipes for the Crock Pot

 

Now that the weather is getting colder, it’s time to break out your slow cooker. We’ve got five healthy chicken soup recipes to get you started with your winterized meal prep. Whether you want something traditional or a soup with a little more spice, you’ll find something to fit every taste on our list. And since you won’t have to spend any time tending to your crock pot soups, you can spend that extra time shopping, decorating, and getting ready for the holidays.

 

Chicken & Sweet Potato Quinoa Soup

Makes 6-8 Servings

Ingredients:

  • 1 ½ pounds boneless skinless chicken breast
  • 1 cup quinoa
  • 2 large sweet potatoes
  • 1 can black beans (15 ounces)
  • 1 can diced tomatoes (14 ounces)
  • 1 teaspoon minced garlic
  • 1 packet chili seasoning mix
  • 5 cups chicken broth

Directions:

  1. Spray non-stick in the crock pot
  2. Cut off the fat from the chicken breasts and place in crock pot
  3. Rinse quinoa and place in crock pot on top of chicken breasts
  4. Peal and chop sweet potatoes and put in the crock pot
  5. Drain and rinse black beans and put in crock pot
  6. Add diced tomatoes (undrained), garlic, seasoning mix and chicken broth
  7. Place crock pot on high and cook for about 3 to 4 hours
  8. Shred the chicken, using two forks or serving utensils
  9. Stir the soup together and add salt and pepper to taste

Spicy Chicken & Corn Soup

Makes 4-6 Servings

Ingredients:

  • ¾ pound boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 can diced tomatoes (14 ounces)
  • 1 cup frozen sweet corn kernels
  • 1 can diced green chiles (4 oz)
  • 1 ½ – 2 tablespoons taco seasoning
  • Lime juice

Directions:

  1. Put all ingredients into the crockpot
  2. Cook on low for about 6 to 8 hours or on high or three to four hours
  3. Shred chicken breasts using two forks, or serving utensils
  4. Stir the soup together

Chicken Taco Stew

Makes 6-8 Servings

Ingredients:

For The Stew

  • 8 chicken thighs (boneless & skinless)
  • 1 ½ cup cups chicken stock
  • ¾ cup salsa
  • 2 diced carrots
  • 1 medium diced onion
  • 1 diced green pepper
  • 1 can corn
  • 1 can black beans
  • 1 can green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder

Toppings

  • ½ cup shredded sharp cheddar cheese
  • 1 cubed avocado
  • ½ cup greek yogurt

Directions:

  1. Combine all of the stew ingredients together in the crock pot
  2. Cook on low power for six to eight hours
  3. Stir the stew together
  4. Top with cheese, avocado and/or Greek yogurt before enjoying

Creole Chicken & Sausage Stew

Makes 4-6 Servings

Ingredients:

  • 1 pound boneless, skinless chicken breast
  • 12 ounces sliced smoked Andouille sausage
  • 1 can diced tomatoes
  • 1 cup chopped onions
  • 1 ¼ cup chicken broth
  • ½ cup tomato sauce
  • 3 tablespoons tomato paste
  • 2 teaspoons creole seasoning
  • ¼ teaspoon cayenne pepper
  • 2 cloves minced garlic

Directions:

  1. Place all ingredients together in the crock pot
  2. Cover and cook on low for six to eight hours, or on high for three to four hours
  3. Shred the chicken using two forks, or serving utensils
  4. Mix the stew together
  5. Cover and cook for an additional 30 minutes

Chicken Pot Pie Soup

Makes 4-6 Servings

Ingredients:

  • 2 pounds boneless, skinless chicken breasts cut into size of choice
  • 2 ½ cups frozen mixed vegetables
  • 3 ½ cups cream of chicken soup (homemade or canned plus 1 cup water)
  • 3 cups cut and cubed potatoes

Optional: (to thicken) 2 tablespoons cornstarch and 3 tablespoons water or ½ cup instant mashed potato flakes

For Cream of Chicken Soup

  • 2 ½ cups water
  • 1 cup milk
  • ¾ cup flour
  • ½ cup half n half
  • 7 teaspoons chicken bouillon
  • 1 teaspoon minced onion flakes
  • ½ teaspoon salt
  • ½ teaspoon garlic
  • ¼ teaspoon pepper
  • ¼ teaspoon parsley

Directions:

Chicken Pot Pie Soup

  1. Combine all ingredients in crock pot (do not include the cornstarch or instant potatoes here)
  2. Cook on high for 6 hours
  3. Stir the soup together
  4. As the soup cools it should thicken, but if you’d like to add more thickness to it add the cornstarch and water mixture or mashed potato flakes now.
  5. If you are thickening the soup, replace lid and allow to simmer for 10 more minutes. (Soup must be hot for cornstarch mixture to work.)
  6. If you are not thickening the soup you are done and ready to enjoy your healthy chicken pot pie soup.

Cream of Chicken Soup

  1. Whisk flour and milk together in a small bowl until smooth
  2. Place half-n-half and water in small sauce pan and boil over medium heat
  3. Stir chicken bouillon into water and half-n-half mixture and reduce to medium heat
  4. Slowly pour the milk and flour mixture into the saucepan while constantly stirring
  5. Add seasoning and continue heating while continuing to stir until the cream of chicken soup has thickened.
