Low Carb Thanksgiving Recipes

Thanksgiving is an American holiday deeply rooted in tradition and history. But it is also a holiday that is surrounded by pounds of turkey, ham or duck, mounds of mashed potatoes, stuffing and cranberry sauce, casserole dishes filled with green beans, sweet potatoes, and cornbread and of course copious amounts of dessert. With all that food covering your holiday table, it’s easy to understand that putting on ten to fifteen pounds of holiday weight is actually fairly common this time of the year. Especially when you factor in leftovers. But your Thanksgiving day celebrations don’t have to put a dent in your fitness progress. This year try these low carb Thanksgiving recipes to keep your stomach satisfied but slim.

 

Low Carb Turkey & Gravy

Ingredients:

  • 1 – 10 Pound Turkey
  • 1 Lemon
  • 1 Garlic Head
  • 2 Celery Ribs
  • 1 Medium Carrot
  • ½ Medium Onion
  • 1 Cup Chicken Broth
  • ½ Cup Butter (Melted) – Olive Oil or Ghee Optional Substitutions
  • Salt (To Taste)
  • Pepper (To Taste)
  • Poultry Seasoning (To Taste)
  • Garlic Powder (To Taste)

Directions For Turkey:

  1. Preheat your oven to 325 degrees F
  2. Prepare the turkey for cooking by clearing its innards
  3. Season the interior of your turkey with salt and pepper
  4. Cut the lemon in half and squeeze the juice from each half into the turkey before leaving the lemon within the cavity
  5. Cut the celery ribs, carrot and onion into chunks and insert into the turkey’s cavity
  6. Mix the melted butter with salt, pepper, poultry seasoning and garlic powder
  7. Carefully pull the skin away from the turkey (without tearing) and rub your butter mixture over the meat
  8. Season the exterior (skin) of your turkey with salt, pepper, poultry seasoning and garlic powder as well
  9. Put your turkey on a large roasting pan with a rack and bake for 3 to 3 ½ hours
  10. Use a meat thermometer to ensure that the thickest part of the thigh reaches 165 degrees D
  11. Remove your turkey from the oven and cover with aluminum foil
  12. Allow your turkey to rest for 20 to 30 minutes before serving

Directions For Gravy:

  1. Post baking transfer the juices from the roasting pan to a saucepan
  2. Add chicken broth and stir
  3. Bring your gravy to a boil over medium to high heat
  4. Allow the gravy to reduce by at least half (thicken)
  5. Serve over the turkey

Grain-Free Low-Carb Stuffing

Ingredients:

  • 4 Cups Parsnip (Chopped)
  • 1 Cup Carrots (Chopped)
  • 1 Cup Yellow Onion (Chopped)
  • 10 oz. Mushrooms (Chopped)
  • 4 Garlic Cloves (Minced)
  • 1 Pad Butter
  • 1 Teaspoon Fresh Thyme Leaves
  • 2 Sprigs Fresh Sage (Chopped)
  • Salt (To Taste)
  • Pepper (To Taste)

Directions:

  1. Preheat your oven to 400 degrees F
  2. Put parchment paper on two baking sheets (to simplify clean up)
  3. Place parsnips on one baking sheet and the carrots and onions on the other
  4. Put both baking sheets in the oven and cook at 400 degrees F for 30 minutes (stir halfway through)
  5. In a skillet over medium heat melt the butter and saute the garlic for about 5 minutes
  6. Add mushrooms and cook for an additional 10 minutes
  7. Place cooked parsnips, onions, carrots and mushrooms into a food processor and pulse (should remain chunky)
  8. Before serving add sage, thyme, salt, and pepper to taste

Mashed Cauliflower

Ingredients:

  • 1 Medium Cauliflower Head (Chopped)
  • 3 Garlic Cloves (Roasted)
  • 1 Teaspoon Fresh Thyme (Leaves)
  • 1 Teaspoon Fresh Chives (Chopped)
  • Salt (To Taste)
  • Pepper (To Taste)

Directions:

  1. Put an inch of water in your steamer pot and bring it to a boil
  2. Place the cauliflower florets into the steamer basket
  3. Reduce the heat to medium-low (simmer) and cover
  4. Steam for about eight minutes
  5. Drain the cauliflower and transfer to a food processor
  6. Add your roasted garlic, thyme, chives, salt and pepper
  7. Blend until the cauliflower reaches your desired mashed texture (add milk or water if too dry)
  8. Serve and enjoy

Low Carb Cheddar Biscuits

Ingredients:

  • 4 Eggs (Beaten)
  • ½ Cup Shredded Sharp Cheddar Cheese
  • ⅓ Cup Coconut Flour
  • ¼ Cup Butter (Melted)
  • 1 Tablespoon Basil (Fresh & Chopped)
  • 2 Teaspoons Garlic (Dried & Minced)
  • 1 Teaspoon Parsley (Fresh & Chopped)
  • ½ Teaspoon Baking Powder
  • ½ Teaspoon Garlic Powder
  • ¼ Teaspoon Salt

Directions:

  1. Preheat your oven to 400 degrees F
  2. Put parchment paper over a baking sheet (to simplify clean up)
  3. Mix flour, baking powder, garlic powder, minced onion, and salt together in a large bowl
  4. Add in the melted butter and eggs and stir out clumps
  5. Add fresh herbs and cheese and mix well
  6. Spoon 10 rolls of baller onto the parchment paper-lined baking sheet
  7. Bake at 400 degrees F for 15 minutes (or until golden brown)

Pumpkin Pie Martini

Ingredients Sugar Rim:

  • 2 Tablespoons Pecans (Finely Ground)
  • ½ Tablespoon Sweetener
  • ¼ Teaspoon Ground Cinnamon

Ingredients Martini:

  • 2 oz. Vanilla Vodka
  • 1 ½ oz. Dark Rum
  • 2 Tablespoons Pumpkin Puree
  • 2 Tablespoons Heavy Cream
  • 1 Tablespoon Sweetener
  • ¼ Teaspoon Ground Cinnamon
  • ⅛ Teaspoon Ground Ginger
  • Pinch Nutmeg (Freshly Grated)

Directions:

  1. Combine sugar rim ingredients on a shallow plate
  2. Wet the rims of two martini glasses and dip into sugar rim (set aside)
  3. Put vodka, rum, pumpkin, cream, sweetener, cinnamon and ginger into a large cocktail shaker and fill with ice
  4. Shake mixture well
  5. Strain mixture into sugar-rimmed martini glasses
  6. Sprinkle with nutmeg and enjoy your low carb dessert
