To make the orange peel jack-o-lantern you’ll want to cut the top off of an orange and scoop all of the innards out until only the peel is left. Next use a small precision knife to cut out a face for your jack-o-lantern in the peel. Once you’ve finished that set them aside until your salad is complete.

The best way to make your salad meal preps spooky is to get creative with your ideas and designs. Salads are a great light fare option for meal preppers, so adding a bit of flare for the holidays with them should be pretty simple.

Eyeball caprese salad is as easy to make as a traditional caprese salad and simply has a different take on the organization of the ingredients. To make this spooky salad lay your spinach down and top it with a slice of tomato. Put a smaller piece of mozzarella cheese on top of the tomato to make the whites of the eyeball and finish it off with an olive slice as the iris. Now you’ve got a spooky eyeball caprese salad.

Make some spooky and festive designs out of the most common ingredients in your salad. Make your own croutons in the shape of bats, tomb stones, witch hats or skulls, cut ghosts out of your cheese slices and create jack-o-lantern faces out of your cucumber slices or cherry tomatoes. With a bit of food coloring and an avocado or two you can turn deliciously boring deviled eggs into creepy eyeball snacks for your Halloween delight. To make these tasty treats start by prepping your eyes as if you were making traditional deviled eggs. When it comes time to add the mayonnaise into your yolks use an avocado instead. This will give your yolks the creamy texture you desire while also changing their coloring to a creepy and spirited green.

Mix about 3 tablespoons of mayonnaise in with red food coloring and paprika together so that you can make your deviled egg eyeballs bloodshot. Put your green yolks into the hard boiled eggs and pipe the red mayo mixture in ragged lines over top to create a bloodshot look. Top your deviled egg eyes with slices of olives to make the iris and create a more realistic look. You can get the same green tinge in your deviled eggs by using mayonnaise and green food coloring, but using avocado is a healthier alternative. You can also use shredded carrots or Sriracha to complete the bloodshot illusion.

Stuffed Pepper Jack-O-Lanterns

This is the easiest healthy Halloween inspired meal prep choice on the list. All you have to do to turn your traditional stuffed pepper into a stuffed pepper jack-o-lantern is cut a face into your stuffed peppers after you’re done cooking everything. Just make sure to cut out your jack-o-lantern once the food has been cooked because if you cut it out before hand, the stuffing may all fall out during the cooking process, leaving you with a scary mess rather than a scary healthy meal.
