4 Healthy BBQ Recipes

Summertime and barbecue season is upon us. You may be having a hard time coming up with healthy BBQ recipes to make and share with your friends, but we’ve got you covered with four of our all time favorite summer BBQ flavors.

 

Grilled Fish Tacos

Grilled Fish Tacos

Makes: 12 Grilled Fish Tacos

Ingredients

Fish

  • 4 teaspoons chili powder
  • 2 tablespoons lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper
  • 2 pounds mahi-mahi or Pacific halibut (½ – ¾ inch thick, skinned and cut into 4 portions)
  • <dottedbottom> Coleslaw
  • ¼ cup reduced-fat sour cream
  • ¼ cup low-fat mayonnaise
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • ⅛ teaspoon salt
  • Freshly ground pepper (to taste)
  • 3 cups finely shredded red or green cabbage

Tacos

  • 12 corn tortillas(warmed)

Directions

Fish

  1. Mix all fish ingredients (except the fish) together
  2. Rub combined ingredients onto the fish and let stand for 20-30 minutes
  3. Preheat grill to medium-high
  4. Oil grill rack (or use a grill basket) and grill the fish until it is flakey and cooked through (3-5 minutes per side)
  5. Transfer to a plate and cut the fish into chunks for your tacos

Coleslaw

  1. Mix all coleslaw ingredients (except cabbage) until smooth and creamy
  2. Stir in cabbage
  3. Refrigerate until ready to serve

Tacos

  1. Fill tortillas with fish, coleslaw, and any additional garnishes you like
  2. Enjoy



Patriotic Quinoa Salad

Patriotic Quinoa Salad

Makes: 4 Servings

Ingredients

Dressing

  • 2 tablespoons honey
  • 2 tablespoons lime juice

¼ teaspoon kosher salt

Salad

  • ¾ cup dry quinoa
  • ½ cup toasted sliced almonds
  • ¼ cup fresh mint leaves (julienned)
  • 16 ounces fresh strawberries
  • 9 ounces fresh blueberries

Directions

Dressing

  1. Stir honey, lime juice, and kosher salt together until well blended

Salad

  1. Prepare the quinoa according to the packages directions and let it cool
  2. Cut strawberries into bite sized pieces
  3. Put quinoa, strawberries, blueberries, almonds, and mint into a large bowl and mix together
  4. Top with dressing
  5. Refrigerate until ready to serve

Grilled Turkey Burgers

Grilled Turkey Burgers

Makes: 4 Burgers

Ingredients

  • 1 ½ lbs ground turkey
  • ⅓ cup finely chopped basil
  • ⅓ cup finely chopped scallions
  • ⅓ cup finely chopped parsley
  • 1 tablespoon minced anchovy
  • 4 tablespoons mayonnaise
  • 1 teaspoon fine grain sea salt
  • ½ teaspoon ground black pepper

Directions

  1. Stir all ingredients together in a large bowl
  2. Separate into four patties
  3. Preheat the grill to medium-high and lightly oil the grill grates
  4. Grill the burgers for about 10 to 12 minutes, flipping them once
  5. Serve with toppings of choice


Pulled Pork & Sweet Potato Bites

Grilled Turkey Burgers

Makes: 50 Bites

Ingredients

BBQ Pulled Pork

  • 2-3 lbs. pork loin roast
  • 1 large red onion, diced
  • 3 whole garlic cloves, peels removed
  • 15 oz. tomato sauce (no added salt)
  • ½ cup balsamic vinegar
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • 5 dried apricots
  • <dottedbottom> Sweet Potato Bites
  • 2 large sweet potato, ¼” slices
  • 4 tablespoons olive oil
  • salt to season
  • 4 oz. goat cheese, softened
  • 2 tablespoons cream cheese, softened
  • ¾ cup sliced green onions

Directions

BBQ Pulled Pork

  1. Mix onions, garlic cloves, balsamic vinegar, smoked paprika, tomato sauce, salt, and apricots together in a medium sized bowl
  2. Put pork loin in the crock pot and cover with balsamic mixture
  3. Cook pork for 4 to 5 hours
  4. Shred the pork

Sweet Potato Bites

  1. Preheat the oven to 425 degrees Fahrenheit
  2. Mix goat cheese and cream cheese in a food processor until they are whipped
  3. Cover 2 baking sheets with foil (for easy clean up) and cover each with 1 tablespoon of olive oil
  4. Lay sweet potato slices on the baking sheets and top them with olive oil and salt for seasoning
  5. Bake for 10 minutes then move the bottom sheet to the top and the top sheet to the bottom, rotating each pan 180 degrees (for even cooking)
  6. Bake for 10 additional minutes
  7. Put goat cheese on top of sweet potato slices, followed by the bbq pulled pork and garnish everything with green onions.
  8. Enjoy
