Ingredients

Salmon Burgers

  • 1 can of wild Alaskan salmon or fresh salmon (170g)
  • 1 medium egg
  • 1 tbsp of arrowroot flour
  • 1/4 cup white onion minced
  • 1 small lemon, juiced
  • 2 tbsps fresh minced parsley
  • 1 large garlic clove minced
  • 1 tbsp lemon zest about 1 small lemon
  • 1/2 tsp sea salt
  • fresh cracked pepper
  • 1 tbsp olive oil for cooking

Lemon Asparagus

  • 1 bunch organic asparagus
  • 1 tbsp lemon zest
  • 2 tbsps minced white onion
  • 2 tbsps olive oil for cooking
  • 1 clove garlic minced
  • salt & pepper to taste
  • 1 whole lemon cut into 1/4″ rounds

Tzatziki Sauce

  • 1/2 cup paleo mayonnaise
  • 3 tbsps fresh minced parsley
  • 1 tbsp apple cider vinegar
  • 1 tbsp water
  • 1/2 tbsp lemon zest
  • 1 clove garlic
  • 1/2 tsp sea salt
  • fresh cracked pepper to taste

Instructions for Salmon Cake

Step 1: Combine Ingredients

Combine all the ingredients for the burger in a medium-size bowl. Then mash everything together with a wooden spoon or a large fork. Make sure all of the ingredients are mixed together.

Step 2: Shape into Patties

Separate the salmon burger mix into four palm-sized burgers. Use your hands to scoop out some of the mixture then roll it in your palm until it has a round shape. Then squeeze down the mix against both of your palms until it becomes a patty.

Step 3: Heat the Pan

Heat a large pan over light to medium heat on your stove. Next, drizzle the pan with olive oil. Let the pan and the oil heat up before you put in the burgers.

Step 4: Cook the Burgers

Gently place the patties into the frying pan to avoid splashing the hot oil. Cook each patty for about 3 minutes on each side or until it turns into a golden brown burger.

 

Instructions for Lemon Asparagus:

Step 1: Heat up the Pan

Heat up a large frying pan on medium heat. Drizzle with olive oil and let it heat up again.

Step 2: Cook the Ingredients

Add all the ingredients for the asparagus into the pan. Cook for about 14 minutes while stirring occasionally. Then set it aside.

 

Instructions for Tzatziki Sauce

Step 1: Blend Together

Take all of the ingredients for the tzatziki sauce and put them inside a blender or a food processor. Then blend until the mixture turns smooth.

Step 2: Serve the Salmon Cakes

Place the salmon burgers on a plate and put the lemon asparagus beside it. Then moderately pour the tzatziki sauce over the burger and asparagus. Serve this healthy salmon cakes recipe and enjoy!
