Healthy Halloween Treats

Halloween is all about becoming anything you want to be by dressing up in fun costumes and enjoying as many sweets and treats as you possibly can. But an overindulgence in sweets can wreak havoc on your health and fitness progress. An over consumption in calories, sugar and caffeine can set you back weeks in the gym, not to mention make it more difficult for you to get back on track with nutritional eating. That’s why we’ve come up with a few healthy halloween treats, so that you can indulge without the guilt.

 

Protein Pumpkin Rolls With Protein Cream Cheese

Ingredients:

  • ¼ cup pumpkin (canned)
  • 2 tablespoons coconut flour
  • ⅓ cup egg whites
  • ¼ tablespoon baking powder
  • 1 – 1 ½ scoops pumpkin pie protein (or vanilla protein)
  • ⅓ cup low fat cream cheese
  • ½ scoop vanilla casein powder
  • Water (as needed)

Directions:

  1. Preheat your oven to 375 degrees F
  2. Mix the pumpkin, coconut flour, egg whites, baking powder and pumpkin pie protein together in a large bowl
  3. Spray non-stick on a cupcake pan
  4. Spoon batter into four evenly sized balls and place each within its own cupcake tin
  5. Bake at 375 degrees F (10 minutes)
  6. Flip the pumpkin balls over and bake for an additional 2-5 minutes
  7. Remove from oven and cool
  8. Mix the cream cheese, casein powder and water together in a large bowl
  9. Use this frosting to ice the pumpkin rolls
  10. Enjoy

Fruity Candy Corn Parfait

Ingredients:

  • Pineapple (cut into bite sized pieces)
  • Mandarin Oranges
  • Low-Fat or Fat-Free Whipped Cream

Directions:

  1. Use clear glasses to make this fruity dessert treat
  2. Place pineapple bites in the bottom of each glass
  3. Top the pineapples with slices of mandarin oranges
  4. Finish off with a bit of low-fat or fat-free whipped cream
  5. Enjoy

Perfectly Seasoned Pumpkin Seeds

Ingredients:

  • Seeds from 2 large pumpkins
  • ½ teaspoon seasoned salt
  • ½ tablespoon olive oil
  • Dash of salt

Directions:

  1. Preheat your oven to 350 degrees F
  2. Remove seeds from two pumpkins, wash and clean them
  3. Soak the clean seeds in a bowl of water for ½ hour (room temp) or overnight (in the refrigerator)
  4. Drain the seeds
  5. Fill a pot with enough clean water to cover your seeds and add salt
  6. Boil the salt water
  7. Put your seeds into the boiling water and continue boiling for 10 minutes
  8. Drain your seeds
  9. Put seeds in large mixing bowl and toss with the olive oil
  10. Place your seeds on a cookie sheet and sprinkle with seasoned salt
  11. Cook in oven at 350 degrees F for 40 minutes rotating the seeds and cookie sheet every 10 minutes
  12. Remove from oven (seeds should be dark yellow and firm)
  13. Cool

Low Carb Pumpkin Cheesecake Mousse

Ingredients:

  • 16 ounces cream cheese
  • 15 ounces pure pumpkin puree (not pie filling)
  • 2 cups heavy cream
  • Pinch salt
  • 2 teaspoons pumpkin pie spice
  • 2-3 teaspoons vanilla extract

Directions:

  1. In a large bowl blend the cream cheese and the pumpkin puree together until smooth
  2. Add the rest of the ingredients and continue blending until the mixture is fluffy (5 minutes)
  3. Taste (add sweetener if needed)
  4. Transfer pumpkin mousse into piping bags
  5. Pipe the mousse into small glasses
  6. Refrigerate until ready to enjoy

No Bake Pumpkin Pie Protein Bites

Ingredients:

  • 9 dates (pitted)
  • ½ cup unsweetened applesauce
  • 3 tablespoons pumpkin puree (not pie filling)
  • ¼ cup almond milk
  • ½ teaspoon vanilla extract
  • ½ cup coconut flour
  • 1 scoop vanilla protein powder
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 2 tablespoons cacao nib (or chocolate chips)

Directions:

  1. Use a large food processor to mix dates, applesauce, pumpkin, almond milk and vanilla extract together
  2. Add the coconut flour, protein powder, pumpkin pie spice and cinnamon and blend until dough forms (too wet = add coconut flour // too dry = add almond milk)
  3. Stir in cacao nibs by hand
  4. Roll the dough into 12-15 bite sized balls
  5. Store in the refrigerator until ready to enjoy
